Lemon Chicken

Serves: 4


  • 3 lbs chicken drumstick and thighs
  • 1 lb potatoes, cut into chunks
  • 1 lemon, sliced
  • 2 Tbsp oil
  • 2 tsp lemon pepper seasoning
  • 1 pkg (12oz) frozen whole green beans, thawed
  • salt and pepper to taste


  1. Preheat oven to 425F.
  2. Arrange chicken and potatoes in large roasting pan.  Tuck lemon slices in between chicken and potatoes.
  3. Sprinkle with oil and lemon pepper seasoning and toss.
  4. Rearrange chicken so skin side is up.  Cover with foil and bake for 20 min.
  5. Remove foil; bake for 15-20 min until chicken is no longer pink near bones and potatoes are tender, adding green beans during last 10 min.
  6. Sprinkle with salt and pepper to taste.
